Once the default font has been set, all new documents that you create will use this font until you change the default option again.

Add fonts to your font list in Google Docs
In supported languages, you can add new fonts to your font list if they don't appear in the list already.
When you return to your document, your new fonts will be highlighted in your font list.

How to Change the Color of the Page in Google Docs
The steps in this article were performed in the Google Chrome Web browser. These steps should be the same for other desktop Web browsers as well.
Step 1: Go to your Google Drive at https://drive.google.com/drive/my-drive and open the document for which you would like to change the page color.
Step 2: Click the File tab at the top of the window.
Step 3: Select the Page setup option near the bottom of this menu.
Step 4: Click the Page color button and select the desired color of the pages in your document. Once you are done, click the OK button at the bottom of the window. The color of the page should then update.
Note that the page color is set for the entire document at once. You won’t be able to specify different colors for different pages.

With styles, you can quickly customize the look of text in a Google document. Use the new styles toolbar menu to format text in your document.
Normal text
Normal text is the default text style of your document. If you update the style of normal text from the styles toolbar menu, the default text style of your document will change accordingly. Fallout new vegas companion guide.
If you change the font style of normal text, the font style of the headings will update. If you want your headings to have a different font style than normal text, we recommend setting normal text style prior to setting heading text style.

After searching in the official Google Doc Help documents it looks like that they don't have any option for default text formatting.
You may try searching for Google Docs add-ons that might help you set a default line spacing value for every doc you create, alternatively you may create your own Docs add-on to have it work as you need and use it by default, though the process of creating an add-on might be very difficult if you are not experienced in JavaScript programming.
